DUMBFOUNDING COMBINATIONS WITH CHOCOLATE

It is deeply ingrained in our minds that only pure chocolate without any flavouring should be consumed. It is also a widespread idea that chocolate should contain too much sugar or vanilla. And maybe people can also accept chocolate with nuts or fruit flavouring. But nothing else.
 
In my blog I would like to show you how chocolate can be used. You would not even think that mixing it with onion or ripened cheese can result in a harmonious taste combination. I almost have a mania for experimenting with all kinds of crazy ingredients in order to prove that it is indeed possible to prepare a fine chocolate with liver or even vegetables…
 
I can only get the most daring gourmets to try these chocolates. But it is certain that once they taste them they never forget them. (Hopefully because they found them so delicious.)
 
I hope everyone has got curious. Let’s see what I was experimenting with over the past few months and years:
 
- different patés (boar meat, venison, foie gras, duck liver)
- cheeses (camambert, gorgonzola, sheep milk cheese, goat cheese)
- vegetables (asparagus, beetroot, celery, ramsons, carrot)
- flowers (ylang-ylang, jasmine, lilac, violet)
- mushrooms (puffball, truffle, porcini)
- onion, caviar, smoke, pipe tobacco, etc…
 
Although these extravagant combinations might seem strange at first glance, they helped me form my unique chocolate making style. I think there are people who are open-minded and are interested in these combinations. They try them because they feel they mustn’t miss the opportunity by simply passing by them. Everyone knows the taste of the chocolate which contains hazelnuts, but this kind of taste experience or taste shock is not easy to get.
